Who doesn’t love the idea of low carb crackers or keto chips? These cheese crisps are a perfect combination of both for a crunchy keto snack. The wonderful thing about this recipe is that you only need one simple ingredient to make them...cheese.
You just pop them in the oven, and they're ready in under 15 minutes. Serve them with your favorite keto dip, and you'll have a delicious, homemade snack or appetizer for any occasion.
You can get creative and sprinkle them with this Everything But the Bagel Seasoning or Cajun Seasoning Mix to add extra flavor. If you want an extra spicy kick, top each piece of cheese with a slice of jalapeño.

🔪 How to Make Keto Cheese Crisps
Select thick cheese slices of your choice and cut into squares or you can buy precut cheese squares.
Preheat oven to 400°F.
Place the cheese slices on a sheet pan lined with parchment paper.
Bake for 12-14 minutes, or until the cheese begins to slightly brown and firms up completely. Most of the oils will also be gone.
Carefully transfer to paper towels to absorb any excess oil.
Allow to cool on the paper towels, then transfer to a cooling rack. The cheese will crisp up perfectly as it cools.
💡 Tips for Making Homemade Cheese Crisps
- The biggest mistake you can make with these crisps is to underbake them. If you don't bake them until they firm and most of the oil has disappeared, they will be bendable and won't hold their crisp. I cannot stress this enough! When baked properly, they will be perfectly crisp and more important, STAY crisp for as long as you store them.
- Also be sure not to over-bake them and you will know they need to come out of the oven if they are getting too dark. If they get too dark, they become bitter, so keep a close eye on them.
- When using different types of cheese, watch your baking times as different cheeses cook faster.

Store cheese crisps in an airtight container or zip lock bag for several days, and you will be able to keep your low carb crackers fresh and crispy.

- Dips: They are always great with tasty dips. Guacamole, salsa, spinach and artichoke dip are awesome choices.
- Cheese and Meat Platter: Create a cheese and meat platter by adding some cured meats, such as salami or prosciutto, alongside the cheese crisps. They make a great addition to this charcuterie board.
- Vegetable sticks: Serve the cheese crisps with a side of vegetable sticks like cucumber, bell peppers, or carrot sticks with some refreshing ranch dressing.

- Cayenne and Lime Crisps: Combine a pinch of cayenne pepper with lime zest, then sprinkle this mixture on the cheese slices before baking.
- Everything bagel: Sprinkle some of this "everything bagel" seasoning mix) on top of the cheese slices before baking.
Why Are Cheese Crisp Not Crispy?
There are two main reasons for this. The first reason is that you did not let them cook long enough. The other reason could be that you did not set them on paper towels to dry up the extra oil.
Are Cheese Crisp Healthy?
Cheese crisps are just cheese, so they are perfectly fine when eaten in moderation on a low carb diet.
Can I Make and Freeze Cheese Crisp in Advance?
You can, but they will lose some of their crispy texture. The good news is, it only takes a few minutes to make a fresh batch.

- 12 thick cheese slices, (Cheddar and Monterey/Colby blend)
Instructions
Preheat oven to 400°F
Place the cheese slices on a sheet pan lined with parchment paper. Bake for 12-14 minutes, or until the cheese completely firms up. If the cheese is even the slightest bit bendable, it's not ready yet. It's important that they are firm before you pull them out of the oven, otherwise they will not stay crisp when you store them.
Transfer to paper towels to absorb any excess oil. Allow to cool on the paper towels and the cheese will crisp up as it cools.
Store in airtight container or ziplock bag for several days and crackers will remain crispy! Serve with guacamole, your favorite creamy dip or with my Buffalo Chicken Dip!
